Vitamins :) / Witaminki :)

Let's talk about witamins today ;) I am very concerned about the healthy diet, as I want to maintain my good health for long, long years. ;D When we talk about balanced diet, the very first thing that people think of this topic are vitamins and minerals. Today I want to talk about them first today.


What are vitamins? :O 
Natural substances and organic compounds that we find in food. Vitamins are essential to our bodies as most of them cannot be made by our bodies. Every single micro-nutrient (vitamin) has its own unique function and we cannot swap any vitamin to any different one (eg. vit. B1 cannot be swapped with vit. B3

Why do we need vitamins? 
We need vitamins to maintain good health and deficiency in them might develop deficiency diseases like scurvy, osteoporosis or avitaminosis.

How can we affect the absorption of vitamins? 
We affect vitamins by storing food in wrong places ( but I will describe how to store foods in different post). The amount of vitamins in food is also affected by the freshness of food. Another ''methods'' that hinder absorption of vitamins are: 
- smoking, 
- drinking alcohol (in excess), 
-taking some prescribed medicines. 

But some people are not trying to obey healthy diet and because of this some producers fortify their foods with vitamins. eg. Breakfast cereals are fortified in B-group vitamins.

Fortification: is a process where producers add vitamins to their foods eg. to replace vitamins that were lost during processing.  

How do we classify vitamins? 
- Water soluble vitamins: B group vitamins, and vitamin C- They are not stored not our bodies and we need to supply our bodies with them, as they are essential. REMEMBER!!! Those vitamins dissolve in water, so if you cook them, try to leave the water (that one left after cooking veggies) and make a sauce with it, as there are vitamins from veggies. As many people know- water soluble vitamins come from vegetables and fruits.
- Fat soluble vitamins: vitamins: A, D, E and K. They mainly come from animal sources like meat and diary. Those are more stable due to high temperature and do not stay in your water, as are dissolved in fat. They are stored in body, so be careful when you take them in to avoid: 

Hipervitaminosis: condition of storing (too) large amounts of fat soluble vitamin (ie. A, D, E & K) in the body. It can be also referred to as Vitamin Poisoning. This can happen when you take lots of meat/ nor diary and supplements, etc. 
We know that there are different types of hipervitaminosis: 
- Hipervitaminosis A, 
- Hipervitaminosis D, 
- Hipervitaminosis E, 
- Hipervitaminosis K, 
- Remember that hipervitaminosis may occur also when we overtake B group vitamins. 







Porozmawiajmy dzisiaj o witaminach. Ja staram sie utrzymac zdrowa diete, a pierwsze o czym myslimy o temacie zdrowej diety sa... witaminy. Zalezy mi na dobrym odzywianiu, poniewaz chce utrzymac zdrowie na dluugi, dluuugi czas.  


Co to sa witaminy? :O 
Witaminy to naturalne substancje, zwiazki organiczne, ktore moga byc wytwarzane syntetycznie. Te mikroelementy sa potrzebne, poniewaz nasze organizmy nie wytwarzaja wiekszosci z tych zwiazkow same.  

Dlaczego potrzebujemy witamin?  
Witaminy pomagaja nam utrzymac zdrowie, a ich niedobor moze skutkowac chorobami, np. szkorbutem, osteoporoza, czy awitaminoza. 

Jak mozemy zaburzyc przyswajanie witamin? 
Przechowywanie i gotowanie poszczegolnych produktowmoze miec wplyw na ich przyswajalnosc. Kolejnymi metodami na zaburzenie przyswajania witamin sa: 
- palenie papierosow, 
- spozywanie alkoholu (w nadmiarze),  
- przyjmowanie niektorych przepisanych lekow.  

Dlatego niektorzy producenci fortyfikuja swoje produkty w witaminy, zeby ludzie mogli je uzupelnic (bo czasem nie uzupelniamy ich calkowicie). 

Fortyfikacja: to proces, w ktorym producenci dodaja witaminy do swoich produktow, zeby uzupelnic te, ktore ''wyparowaly'' w procesie przetwarzania.

Jak dzielimy witaminy? 
- Rozpuszczalne w wodzie: witaminy z grupy B, witamina PP i witamina C- Te musimy uzupelniac codziennie, poniewaz nasz organizm ich nie przechowuje Pochodza z warzyw i owocow. PAMIETAJCIE!!! Te witaminy rozpuszczaja sie w wodzie, takze podczas ich gotowania. Nie wylewajcie wody, ktora zostaje po gotowaniu warzyw. Lepiej zuzyjcie je do zrobienia na niej zupy lub sosu (to takze podniesie walory smakowe). 
- Rozpuszczalne w tluszczu: witaminy A, D, E i K sa bardziej odporne na wysokie temperatury i nie zostaja w wodzie po gotowaniu. Czerpiemy je z jedzenia pochadzacego od zwierzat (miesa i nabialu). Te witaminy sa przechowywane w naszym ciele i uwazajmy na ilosc, ktora przyjmujemy. Ich nadmiar w diecie moze skutkowac hiperwitaminoza. 

HIPERWITAMINOZA: to zespol objawow chorobowych wywolanych nadmiarem witamin (rozpuszcalnych w tluszczu- A, D, E i K). Inaczej nazywane tez Zatruciem witaminowym. To dzieje sie, kiedy w naszej diecie przyjmujemy zbyt wiele pokormow bogatych w witaminy rozpuszczalnych w tluszczu i suplementow, itd. Rozrozniamy kilka rodzajow hiperwitaminozy: 
- Hiperwitaminoza A, 
- Hiperwitaminoza D, 
- Hiperwitaminoza E, 
- Hiperwitaminoza K.  
- Nie zapominajmy, ze nadmiar witamin z grupy B tez moga wystapic.
